Best multi-use stovetop to high temp oven pan I ever had. CAVEAT: Inspect yours carefully - we had to send back the first one because it arrived chipped on the outside surface, very disappointing. Happily the replacement 2d one arrived in perfect shape. DETAIL ON USE: Use it regularly for frittatas - a recipe that starts on stovetop (gas) and then spends 20 minutes in 425 degree oven. Then after it cools a bit I store the frittata in the pan in the fridge, so that's diverse temperatures. That's hard duty and even with that and baked on cheese this pan is by far the easiest to clean I've ever had. Due to its size and quality it's not the lightest pan but still lighter than say a cast iron skillet. Cooks evenly, far more evenly than the old pan (different brand) that it replaced. BACKGROUND: Replaced a similar non-stick Caphalon we had for years, but nonstick on the old Caphalon began wearing off over time as is to be expected. I would have simply got a new Caphalon but they're designed differently now - new Caphalons due to silicon handles are not rated high enough temperature-wise for my baking needs. In other words, we were forced to venture to an entirely new brand of pan. After research it narrowed down to a field of one - this scan pan had the GREAT large size I needed - deep and a bit wider than my old Caphalon, and without the pesky silicon handles. Wish it had a glass lid but did not want to forego this super large size for a smaller scan pan with a glass lid. We've already used it almost daily (anyway at least a few times a week) and I just love it. I was worried at first that it wouldn't be as good as the old Caphalon but so far it's actually better, surface so easy clean. We loved it so much gave two as Christmas presents. I hope it wears well, too soon to tell how it will be ten years from now, but so far the pan is an A plus. Just make sure you inspect so you don't get a damaged one. Bon appetite!
